STEAK TARTARE WITH HORSERADISH CROUTONS

INGREDIENTS

1 Baguette, Thinly Sliced on An Angle

40g TFC Horseradish

Micro Herbs, To Serve

600g Fillet Steak, Trimmed, Cut Into 1cm Pieces

20 G TFC Horseradish

Juice Of 1 Lemon

50ml TFC Hot Chilli Sauce

20g TFC Minced Garlic

1/2 Bunch Flat-Leaf Parsley, Leaves Finely Chopped

2 Tbs Extra Virgin Olive Oil

2 Tbs Capers in Vinegar, Drained, Chopped

6 Cornichons, Finely Chopped

1 Eschalot, Finely Chopped

METHOD

  1. For steak tartare, combine all ingredients from the meat onwards in a bowl and season to taste. Cover with plastic wrap and chill until ready to serve.
  2. To make horseradish croutons, preheat grill to high. Mix Horseradish with oil. Brush baguette with oil, then grill for 2 minutes each side or until golden and crisp. 
  3. Serve tartare on horseradish croutons and top with micro herbs.
