Sage & Goat Cheese Scones

INGREDIENTS
2 cups all purpose, or SR flour
1 Tblsp baking powder (15ml spoon)
1/2 tsp salt
1/2 cup melted unsalted butter
1 cup milk or buttermilk
3 Tblsp sage, dill and/or chives finely chopped (or any other herbs)
1 head roasted garlic, chopped roughly*
2oz /60g chèvre (goat’s cheese) or feta
1/2 cup cheddar cheese, grated (or grated pizza cheese)
METHOD
- Preheat oven to 220°C (450°F). Line a baking sheet with baking paper.
- In a large bowl, mix flour, baking powder and salt, until combined.
- Rub chèvre into flour
- Mix in sage, roasted garlic and cheddar.
- Stir in milk and melted butter until just combined.
- Drop the batter onto the (greased) baking sheet.**
- Bake for 12-15 minutes, until golden brown.
For topping: (Optional – I don’t bother)
2 Tblsp butter 28g
1/2 tsp garlic powder
- In a small bowl, add butter and garlic powder.
- Melt in microwave.
- When scones come out of the oven, brush the tops lightly with the melted butter mixture.
Serve with garlic/herb butter
* I use ∼2 tsp The Food Company roasted garlic.
**These scones freeze very well before cooking; and bake when needed
