BBQ Prawn Tacos with Fried Leek

INGREDIENTS

1 Leek Gut into Julienne Strip

12 White Corn Tortillas

1 Baby Cos Lettuce, Leaves Separated

1 Spring Onion Cut into Strips

36 Green Tiger Prawns, Peeled

150 Mls TFC Smokey BBQ Sauce

Lime Wedges, To Serve

 2 Tsp Sweet Paprika 

METHOD

  1. Fry of leek in deep fryer till crispy and golden brown. Strain and drain on paper towel 
  2. Marinate Prawns in BBQ sauce and sauté in fry pan on high till fully cooked.
  3. Heat the tortillas following packet directions. Divide tortillas among serving plates. Top with  lettuce, spring onion, prawns,  and fried leek . Serve with lime wedges.
