BBQ Prawn Tacos with Fried Leek

INGREDIENTS
1 Leek Gut into Julienne Strip
12 White Corn Tortillas
1 Baby Cos Lettuce, Leaves Separated
1 Spring Onion Cut into Strips
36 Green Tiger Prawns, Peeled
150 Mls TFC Smokey BBQ Sauce
Lime Wedges, To Serve
2 Tsp Sweet Paprika
METHOD
- Fry of leek in deep fryer till crispy and golden brown. Strain and drain on paper towel
- Marinate Prawns in BBQ sauce and sauté in fry pan on high till fully cooked.
- Heat the tortillas following packet directions. Divide tortillas among serving plates. Top with lettuce, spring onion, prawns, and fried leek . Serve with lime wedges.
