BALSAMIC GLAZED SWEET POTATO AND LENTIL SALAD

INGREDIENTS

800g Sweet Potato, Peeled, And Diced Into 2cm Dice

1 Tbsp Extra Virgin Olive Oil

250 Mls TFC Caramelised Balsamic 

800g Can Lentils, Rinsed, Drained

450g Baby Spinach

Julienned Red Capsicum (Garnish)

METHOD

1.Preheat oven to 210C/190C fan forced. Line a large baking tray with baking paper. Combine the sweet potato, oil, Caramelised Balsamic in a large bowl. Season and mix to combine. Spread over the prepared tray. Bake for 25-30 minutes or until starting to soften

2.Scatter lentils over the sweet potato. Spray with oil and roast for a further 25-30 minutes or until vegetables are tender.

3. Add spinach and gently toss to combine. Garnish with red capsicum and more dressing if desired and serve
