200mL TFC Caramelised Balsamic Vinegar

- Preheat oven to 190°C.
- Place chicken on a rack in a large roasting pan. Place 1 lemon into the cavity optional. Season chicken. Tie legs together with kitchen string. Brush chicken with glaze. Then Pour remaining balsamic over the chook in the roasting pan. Roast for 1 hour 20 mins, brushing chicken with more glaze 3 times during cooking and covering with foil if necessary to prevent overbrowning, until chicken is cooked through and juices run clear when the thickest part of the thigh is pierced with a skewer. Transfer the chicken to a plate and cover with foil. Set aside for 10 mins to rest.
- Meanwhile, steam assorted greens to your liking and season and place in dish to serve
- Serve chicken parsley and lemon with steamed greens and crusty bread.
