Method
Take 26 ( twenty six ) Soy & Linseed biscuits, crush till fine. Mix in melted margarine. Place in a square & deep cake tin, lined with baking paper & greased. Let paper over-hang to use as handles. Press in crushed biscuits on bottom only. Rrefrigerate.
FILLING
In a microwave safe bowl, pour half cup boiling water on gelatin, stir till blended,
microwave on HIGH 30 seconds. Pour in the lemon juice, stir, leave to cool
Mix the cream cheese and sour cream together in a large bowl, till well blended and no lumps. Add the CHOPPED ONION and diced capsicum, mix well , add the cooled gelatin, stir well. Ppour over biscuit base.
Leave to set overnight.
Remove from cake tin, cut into slices.
